Method of Preparation

In a pressure cooker, boil:
- 200g of toor dal
- 2 chopped tomatoes
- Garlic (optional)
- A pinch of salt and turmeric
Once cooked, mash the dal slightly.
Soak a lime-sized tamarind in water, strain, and prepare an extract.
In a pot, heat gingelly oil and add:
- Mustard seeds
- Cumin seeds
- Fenugreek seeds
Sauté onions and curry leaves, then add sambar vegetables.
Add water and cook until the vegetables are tender.
Stir in the cooked dal, tamarind extract, and 3-4 tablespoons of Meiyal Sambar Masala.
Boil and mix well.
Adjust salt and garnish with coriander leaves for a rich, aromatic sambar.
